I hate mushrooms.... but I love them

.......Cooked (or pickled) mushrooms?? Sign me up. I've always been pretty icked out by mushrooms, but then my roommate made some marinated shiitake mushrooms (step one of this recipe) to add to poke bowls and like.... gosh it's delicious, so rich and flavorful.
After I had that, I thought "Oh I like mushrooms now!" So I went to a salad place and ordered a mushroom bowl.... and they gave me a bunch of raw mushrooms. Tried it and was shocked at the grossness. I didn't like the texture and lack of flavor. Turns out I still have my limits.
Nonetheless, I moved forward bravely into other mushroom endeavors. A new recipe in my arsenal now is vegan mapo tofu, which replaces the beef with a bunch of chopped shiitake mushrooms (and some fermented black beans). This is the main recipe I use, though I make some edits based on taste and what's available. It's just SO thick and rich, and the contrast of the spiciness with the gentle, pudding-like soft tofu is absolutely divine.
And I will confess that once or twice in my life I've had a yummy portobello mushroom as a burger replacement... usually when marinated/grilled/sauced up.

Date: 2022-04-16 10:07 am (UTC)Personally, I'm more of a purist bc i love mushrooms, I'll eat them raw, on a slice of bread with spread, but i also like them just fried in a pan in honey with onions until you have kind of a sticky sauce, then the taste really comes out...
Orrrr for BBQs, get the really chonky bois, scrape out the insides and mix them with cream/spread, onions and fill the mushrooms with that; throw on the grill and voila ๐๐

Soup recipe -- I add whatever veggies I want to this, always comes out good
Base stir fry recipe -- I like adding whatever to this, too, and also noodles
