Yum yum vegan tourtiere!

My most dearly beloved roommate made us some tourtiere tonight, which I LOVE. From what I understand, tourtiere is a french canadian meat pie... but I'm vegetarian, so my roommate makes a vegetarian/vegan one!

It takes some work so she doesn't make it often, but I love it. It's got a great flavor profile, warm and hearty with chewiness and textural interest from a combination of mushrooms and baked tofu crumble... and of course all this chewy savory stuff contrasted with the flaky, firm dough of the pie crust!

If you're looking for a savory pie, then check out this recipe! It's officially vegan, although my roomie uses real butter and store-bought pie crust so ours is technically vegetarian.
